Cao Guo (Chinese Black Cardamom, Lanxangia tsao-ko) is a smoky, camphor-like spice essential in Sichuan and Yunnan cuisine. The large, wrinkly, dried pods are commonly used in long-cooked braises, stews, hot pots, and pho to add deep, woody aroma. Often called grass fruit, it is a staples spice for flavoring meat dishes and creating chili oil.
