Lye water (also known as kansui, 枧水, or lihia) is a clear, food-grade alkaline solution (often potassium carbonate/sodium carbonate) used in Asian cuisine to improve texture, add a yellow hue, and add a distinct flavour to noodles, rice dumplings, and mooncakes. With a high pH (11–14), it creates "QQ" chewy noodles and softens foods like glutinous rice.
